Sagne Torte


The SAGNE TORTE are a homemade pasta in the shape of a long twisted smear, similar to the noodle, made with a delicate and precise hand movement, probably created for the first time by the ancient Apulian pasta makers. They are the classic “ Sunday dish ” and, together with the orecchiette, the most famous pasta format in Salento. It is said that the  “sagne torte” were born to pay homage to St. Joseph, as suggested by the shape reminiscent of the wood chips of the carpenters' shops.
