Margherita pizza has become famous all over the world thanks to a cook, Raffaele Esposito, who in honor of Queen Margherita at the end of ’ 800 made a pizza with three simple ingredients on it: tomato in sauce, mozzarella and basil.

The pizza as we know it today was born in Naples at the end of ‘ 600, in all other regions in fact the term pizza was used for sweet preparations.

Calzone was born in the same historical period as pizza and its name is attributed to a stuffed pizza dough folded over itself.

The version of the Neapolitan calzone with ricotta and salami is much more recent and adapts well to the palate of the population of central-southern Italy being a rich and tasty dish.
